Refrigerator Pickled Cucumbers
My friend Frankie swears these pickles taste just like the ones he ate in the Army.
2 to 3 large cucumbers, peeled and sliced into rounds
1 medium white onion, sliced
½ cup sugar
1 cup white vinegar
2 cups water
1 Tablespoon each salt and pepper
Layer the cucumber and onion slices in a 2-quart jar. Simmer together the rest of the ingredients until the sugar and salt are dissolved. Pour over the veggies, cover, and refrigerate overnight before using.
