<p style=”text-align: left;”>We have arugula in abundance here, so thought I’d try this…. and even Stephen (who doesn’t like basil pesto) loved it.
4 compressed cups of washed, roughly chopped arugula</p>
1 cup walnuts
1 cup grated parmesan cheese
2 large garlic cloves
salt and pepper to taste
juice 1 lemon
Approx 1/3 cup olive oil
Put all ingredients except oil in food processor and blend to paste.
Add oil slowly while processing.
adjust seasoning if necessary… enjoy!
Yum! I have lots of arugula now.
